Slow-cooked to perfection, the soup becomes rich in nutrients and offers a soothing, comforting experience, perfect for cold days or as a healing meal. Optional ingredients like red dates and dried cuttlefish add depth and umami.

WHAT IS ARROWROOT?

Arrowroot is a starchy substance derived from the root of several tropical plants, primarily from the Maranta arundinacea plant. It’s used as a thickening agent in cooking and baking. Here’s a bit more about it:

Characteristics:

  • Texture and Appearance: Arrowroot is typically found in a fine, white powder form. It has a neutral taste and is known for its smooth, silky texture when used as a thickener.
  • Usage: It’s commonly used to thicken sauces, soups, and puddings. It’s a popular choice for recipes where a clear or translucent finish is desired, as it does not cloud liquids.
  • Cooking Properties: Arrowroot thickens at a lower temperature compared to other thickeners like cornstarch and doesn’t require prolonged cooking. It also thickens without altering the color or flavor of the dish.
  • Dietary Benefits: It’s a gluten-free and easily digestible option, making it suitable for those with gluten sensitivities or digestive issues.

Substitutes: If you don’t have arrowroot, you can substitute it with cornstarch, tapioca flour, or potato starch, though the texture and appearance may vary slightly.

Arrowroot is valued for its smooth consistency and is often used in delicate recipes where a clean, clear thickening is needed.

INGREDIENTS AND SUBSTITUTES

Ingredient quantities please refer to the recipes card (Click here)!

  • Lotus Root: Adds crunch and nutrition. If unavailable, you can substitute with water chestnuts for a similar texture.
  • Arrowroot: Provides a smooth, thickening agent for the soup. You can substitute with cornstarch or tapioca flour, but the texture may differ slightly.
  • Peanuts: Contributes protein and a rich, nutty flavor. If you prefer, you can use almond meal or sunflower seeds as an alternative.
  • Ginger: Enhances the flavor with a warming spice. Fresh turmeric can be used as an alternative, or ground ginger if fresh is not available.
  • Salt: Balances the flavors. Sea salt or Himalayan salt can be used; adjust to taste.
  • Chicken Broth: Forms the base of the soup, adding depth. Vegetable broth or water can be used as substitutes, but they will alter the flavor.
  • Spring Onions (for garnish): Adds a fresh, mild onion flavor. Chives or finely chopped regular onions can be used, or omitted if preferred.

These substitutes ensure you can adapt the recipe to what you have on hand while maintaining a flavorful and satisfying soup.

RECIPES TIPS

  • Prepping Pork Ribs: Clean the pork ribs thoroughly and consider blanching them in boiling water briefly to remove impurities for a clearer broth.
  • Prepping Lotus Root: Using whole lotus roots in the soup to help retain their moisture during long cooking times. However, if you prefer, you can slice them before cooking. Peel and slice the lotus root, then soak it in water with a bit of vinegar to prevent discoloration.
  • Enhancing Flavor: For a deeper flavor, you can sauté the lotus root slices with a bit of ginger before adding them to the soup.
  • Arrowroot Preparation: Mix arrowroot with a small amount of cold water before adding it to the soup to avoid lumps.
  • Cooking Time: Allow ample time for the lotus root to become tender but still slightly crisp. Arrowroot will thicken the soup gradually.
  • Thickening the Soup: If you prefer a thicker soup, blend a portion of the soup with an immersion blender or in a regular blender and stir it back into the pot.
  • Adjusting Seasoning: Taste the soup before serving and adjust the seasoning as needed. You can add a pinch of sugar to balance the flavors if desired.
  • Garnishes: Fresh herbs like chopped cilantro or green onions can add a burst of flavor and color just before serving.
  • Storage: Store leftover soup in an airtight container in the refrigerator for up to 3-4 days. For longer storage, freeze in a freezer-safe container for up to 2-3 months.
