MUNG BEANS (GREEN BEANS)

Mung beans are known as green beans (绿豆) as well. Mung beans are often served as a sweet dessert, known as tong sui (sweet soup) to get the “cooling effect” for a hot and hazy weather. It can be paired with sago, coconut milk, pandan leaves or sweet potatoes.

INGREDIENTS AND SUBSTITUTES

  • Brown Sugar – You may skip this if you prefer not to sweeten the green bean soup. Just use the natural sweetness from the sweet potatoes complement the green bean soup. Or use any other sweetener on your preference.
  • Pandan Leaves – You may skip this if you don’t have pandan leaves.
  • Sweet Potatoes – You can use any variety and colour (orange, yellow or purple), or mix.

RECIPES TIPS

  • Soak the green beans. It will shortens the cooking time & helps to clean the beans. If you don’t have the time to soak the beans, feel free to skip this step and extend the cooking time (additional 20 – 30 minutes) to reach your preferred softness.

STORAGE

Let the desserts soup cools down completely. Transfer to a air-tight container and keep in the fridge for up to 7 days. Simply serve chilled or reheat if you prefer.
The sweet potatoes are not recommend to freeze, you may freeze the mung bean soup without the potatoes up to a month. Simply thaw in the fridge overnight or at the counter and then reheat on the using warm up function in Thermomix® or in the microwave.

 1200 g water
 200 g mung bean, soaked for 4 hours
 5 pandan leaves
 60 g brown sugar
 200 g Sweet Potatoes, peeled and cut into cubes

Place water, mung beans and pandan leaves into mixing bowl, cook 30 min | 100°C | ⤺ Speed 1. Remove pandan leaves.

Add brown sugar and sweet potatoes, cook 15 min | 100°C | ⤺ Speed 1. Serve hot.

Directions
