Bolognese Pasta
True classic Italian Bolognese is meaty, spicy and cook with wine. This version is baby friendly. No chillies, no wines. Mama's best Bolognese Pasta.
Place water into mixing bowl use Kettle Mode | 100ºC bring to the boil or using 10 min | 100°C | speed 1.
Add salt (optional) and dried pasta through hole in mixing bowl lid and cook Time indicated on package | 100°C | ⤺ speed 1, without measuring cup, until al dente. Drain pasta through Varoma dish keep in Thermoserver.
Place carrots, onion, and garlic into the Thermomix mixing bowl, chop 6 sec | speed 5 and scrape down the sides with spatula.
Add oil and sauté 5 mins | 120°C | speed 2 .
Add mince meats , slightly mix with spatula and sauté 7 min | 120°C | ⤺ Speed Spoon.
Add tomatoes, tomato paste, salt, pepper, sugar, basil and bay leaves, mix once with spatula, place simmering basket on mixing bowl lid instead of measuring cup to prevent splattering and cook 12 min | 100°C | ⤺ Speed Spoon. Stir again with the spatula and, if necessary, break up larger pieces of minced meat with the spatula. Remove the bay leaves. Serve with penne or spaghetti.
