These Cheesy Breadsticks with Honey Mayo Topping are a delightful treat combining soft, fluffy bread with a rich, cheesy exterior. Topped with a drizzle of honey mayonnaise and a sprinkle of dried parsley, these breadsticks are perfect for a snack, appetizer, or a savory side dish.

 250 g bread flour
 130 g milk
 40 g eggs
 1 tsp instant dried yeast
 20 g milk powder
 25 g sugar
 20 g butter
 2 g salt
 100 g mozzarella cheese, shredded
 sugar, for sprinkle
 50 g mayonnaise
 10 g honey
 1.50 tbsp dried parsley

In a Thermomix® mixing bowl, combine flour, milk, eggs, yeast, milk powder and sugar. Knead for knead | 2 min until the dough is smooth and elastic.

Add butter and salt to the dough. Continue kneading for another knead | 3 min. Transfer the dough onto a silicone bread mat or lightly floured work surface and shape it into a ball. Wrap the dough in the bread mat or place it into an oiled bowl and cover with plastic wrap. Leave to proof until doubled in size (approx. 1 hour).

Transfer the dough onto a lightly floured work surface and divide it into 6 equal portions, each weighing about 80 grams. Shape each portion into a ball and let them rest for 5 minutes.

Using your palm, flatten each ball of dough to release any trapped air. Roll each dough portion up tightly from one end to the other, sealing the opening. Roll out the dough into a longer log, approximately 12-15 cm long. Flip over the dough and dip it into a bed of shredded mozzarella cheese, pressing gently to adhere the cheese to the surface. Place the logs on a baking tray, spacing them about 4 cm apart. Cover the dough with a damp cloth and let it proof for 30 minutes or until almost doubled in size. Preheat the oven to 180°C (356°F) during the last 15 minutes of proofing.

Drizzle mayonnaise over the cheese in a zigzag pattern and sprinkle some sugar on top. Bake the cheese stick breadsticks in the preheated oven at 180°C (356°F) for 16 minutes or until they are golden brown and cooked through. Meanwhile, mix 10g honey and 10g mayonnaise in a separate bowl until well combined.

Once done, brush the breadsticks with the honey and mayonnaise mixture and sprinkle dried parsley on top. Transfer the breadsticks to a cooling rack to cool slightly before serving. Enjoy these delicious and cheesy cheese stick breadsticks with their delightful cheese mayonnaise topping!
