Lotus Root and Arrowroot Soup with Peanuts

Lotus Root and Arrowroot Soup with Peanuts

Lotus Root and Arrowroot Soup with Peanuts is a light, nourishing Chinese herbal soup known for its delicate flavor and health benefits. The lotus root adds a subtle crispness and natural sweetness, while the arrowroot (粉葛) contributes a mild, earthy taste with a smooth, starchy texture that thickens the broth. Peanuts lend a gentle sweetness and creamy nuttiness, balancing the flavors. Slow-cooked to perfection, the soup becomes rich in nutrients and offers a soothing, comforting experience, perfect for cold days or as a healing meal. Optional ingredients like red dates and dried cuttlefish add depth and umami.
Prep Time10 minsCook Time40 minsTotal Time50 mins
Yields4 Servings
 500 g pork ribs
 1 whole lotus root, peeled
200 g arrowroot (粉葛), peeled and cubed
80 g raw peanuts, soaked for 30 minutes
3 dried red dates (optional for sweetness)
 1500 g water
 ½ stock cubes
 1 pinch white pepper
 1 tsp salt
 spring onion
Pressure Cooker Method:
1

Rinse and blanch the pork ribs in boiling water for 3-5 minutes to remove impurities. Drain and set aside.

2

In a large pot, add 1.5 liters of water and bring it to a boil. Add in the pork ribs, lotus root, arrowroot, peanuts, red dates.

3

Close the lid of the pressure cooker and ensure it’s sealed. Set the cooker to pressure cook for 20 minutes. Once cooking is complete, allow the pressure to release naturally for about 10–15 minutes.

4

Carefully release the pressure from the cooker and open the lid. Use tongs to gently remove the whole lotus root, then slice it into thin rounds and return the slices to the soup. Season with salt to taste and give the soup a good stir. Serve the soup hot, featuring tender pork ribs, softened lotus root slices, arrowroot, and peanuts, all immersed in a flavorful broth.
