Lotus Root and Arrowroot Soup with Peanuts
Rinse and blanch the pork ribs in boiling water for 3-5 minutes to remove impurities. Drain and set aside.
In a large pot, add 1.5 liters of water and bring it to a boil. Add in the pork ribs, lotus root, arrowroot, peanuts, red dates.
Close the lid of the pressure cooker and ensure it’s sealed. Set the cooker to pressure cook for 20 minutes. Once cooking is complete, allow the pressure to release naturally for about 10–15 minutes.
Carefully release the pressure from the cooker and open the lid. Use tongs to gently remove the whole lotus root, then slice it into thin rounds and return the slices to the soup. Season with salt to taste and give the soup a good stir. Serve the soup hot, featuring tender pork ribs, softened lotus root slices, arrowroot, and peanuts, all immersed in a flavorful broth.
