Pork Ribs Pumpkin Sweet Corn Soup
In a pot, bring water to a boil. Add the pork ribs and blanch for 5 minutes to remove impurities. Drain and rinse the ribs under cold water, then set them aside.
Place the pork ribs, sweet corn and dried scallops (if using) into the pressure cooker. Pour in 1.5 litres of water, ensuring all ingredients are submerged but not exceeding the maximum fill line of the pressure cooker.
Seal the lid and set the pressure cooker to pressure cook for 20 minutes. Once cooking is complete, allow the pressure to release naturally for about 10–15 minutes.
Open the pressure cooker and add the pumpkin cubes. Close the lid and cook on high pressure for an additional 5 minutes. After the additional cooking time, perform a quick release of the pressure.
Open the lid carefully, and season the soup with salt to taste. Ladle the soup into bowls and serve hot.
