 10 g cooking oil
 2 slices, ginger
 500 g chicken (bone-in pieces)
 1 tsp soy sauce
 1 tsp fish sauce
 150 g fresh pineapple (cut into chunks)
 1500 g water
 ½ bitter gourd (cut into chunks)
 ½ stock cubes
 1 pinch white pepper
 15 g goji berries
Pressure Cooker Method:

Heat a little oil in a large pot over medium heat. Add the minced garlic and ginger. Sauté until fragrant and softened, about 2-3 minutes.

Add the chicken pieces to the pot and brown them slightly on all sides. Season with soy sauce and fish sauce (if using).

Add the pineapple chunks and stir for a minute or two to release their sweetness into the soup. Pour in the water or chicken broth, and close the lid of the pressure cooker and ensure it’s sealed. Set the cooker to pressure cook for 10 minutes. Once cooking is complete, manually release the pressure.

Open the lid, add the prepared bitter gourd. Let them slow cook for another 5-10 minutes until tender but still slightly firm.

Season the soup with salt and pepper to taste. Adjust other seasonings as needed. Garnish with goji berries before serving.
