Tau Foo Fah is a Chinese dessert made with very soft tofu eaten with a clear sweet syrup infused with ginger or pandan.
Soak soybeans with 800g water overnight or at least 8 hours. Drain water before use.
Warm thermoserver / Thermo bowl (can keep warm) that can place 2 liter worth of liquid, filled with 1 liter of boiling hot water, set aside.
Place the soaked and drained soybeans into the Thermomix Mixing Bowl and add 400g water. Blend it at 1 min 30 sec | speed 10.
Add 1000g water and mix 30 sec | speed 4.
Strain soy milk with a fine sieve or nut milk bag. Skim off bubbles or foam with a spoon.
Pour soy milk into mixing bowl, place Varoma into position to prevent splashing and cook for 17 min | 95ºC | speed 2 .
Continue to cook for 3 min | 100ºC | speed 2 . Meanwhile, discard the hot water in the Thermoserve and prepare setting mixtures in the Thermoserver and mix well together.
Once soymilk is ready, pour soymilk at a height of 1-2 ft gradually (to prevent splashing) into the thermo server. Cover the Thermo server with a lid and let the pudding set for at least 1 hour.
Place all the ingredients into the mixing bowl and cook 5 min | 100ºC | speed 2.
Continue cook with 5 min | Varoma | speed 2.
Reserve into a jar for later use.
Use a shallow ladle (or TTF ladle) to scoop some of the pudding into a bowl. Add some syrup. Serve hot or chilled.
