Lemon Barley is a popular drink in Southeast Asia, it serve almost everywhere in local coffee shop or restaurant. It can be served warm or chilled during the hot weathers!

VARIATION

  • Sweetener: you may use honey, sugar, or any other sweetener instead of candied winter melon.

HOW TO STORE

Barley water can keep in a container in the fridge for up to a week. If you like to enjoy barley water hot, you can reheat it in the Thermomix using the warm up function or microwave.

 100 g Pearl Barley
 50 g Candied Winter Melon
 1000 g Water
 1 Lemon, juiced

Place rinsed pearl barley, candied winter melon and water into Thermomix Mixing Bowl and cook for 40 min | 100ºC | ⤺ Speed 1.

Stir in lemon juice and serve hot or let the mixture cool to room temperature.
