Soothing and refreshing Snow Fungus Dessert Soup (雪耳莲子糖水), super quick and easy dessert soup to nourish your body. I love the subtle sweetness from the red dates, longan and goji berries, additional rock sugar that can be adjusted to your own preference. Rock sugar gives a subtle and delicate sweetness to the dessert that can’t be achieved with white sugar.

RECIPES TIPS

  • Add the goji berries at last. Goji berries can develop a unpleasant sour taste when left to cook for too long, so add them in towards the end will be just enough time for them to bloom.
  • Add pearl barley. If you like more texture as you chew, you might add some pearl barley as well.
