One Bites Almond Cookies
One of the favorite cookies to be served during Chinese New Year is usually made in peanuts. Try out these using almonds and adjust the sugar to your taste!
Preheat oven to 160ºC. Line two baking sheets with baking paper.
Place the sugar into Thermomix mixing bowl and turn on Turbo | 2 sec for 2 times.
Add in the all-purpose flour, baking powder, baking soda, sugar, salt, and ground almond, mix 20sec | speed 4.
Add oil, mix 20sec | speed 4 to form into cookie dough.
Use a teaspoon to shape the dough into round balls (8g each). You should get about 100 cookies. Arrange the shaped cookies on the prepared baking sheet.
Place a whole almond on top of each ball and press it on slightly, and brush it with egg wash. Then bake the cookies in preheated 160ºC oven for 14-16 minutes, or until the cookies become slightly golden.
Let the cookies cool on the baking sheet for 10 minutes. Gently remove the cookies and cool on the wire rack. Once the cookies are completely cool, store them in airtight containers.
