 150 g butter
 210 g flour
 85 g castor sugar
 1 ½ tsp baking powder
 ½ tsp salt
 ¼ tsp cinnamon powder
 125 g milk, room temperature
 100 g eggs
Cinnamon Sugar Coating
 70 g castor sugar
 1 ½ tsp cinnamon powder

Start by preheating the Thermomix® oven to 180°C (350°F). To prepare your muffin tin, either grease a 10-hole non-stick muffin tin with butter or cooking spray, or use muffin paper liners for convenience.

Place the butter into Thermomix® mixing bowl, melt for 5 min | 60°C | Speed 1. Once the butter is fully melted, transfer it to a separate bowl and set it aside.

Add the flour, sugar, baking powder, salt, and cinnamon powder. Mix for 5 sec | Speed 4 to combine.

Add the warm milk, lightly beaten egg, and 65g melted butter to the mixing bowl. Mix for 20 sec | Speed 5 until the batter is combined but still lumpy. Be careful not to overmix.

To fill the muffin tin, use a spoon or an ice cream scoop to divide the batter. Each muffin mold should be filled to about half its capacity.

Bake in the preheated oven for 25-30 minutes or until the muffins are golden at the edges and a toothpick inserted into the center comes out clean. While the muffins are baking, you can prepare the cinnamon sugar coating. In a small bowl, mix 70g of caster sugar with cinnamon powder.

Once the muffins are ready and still warm, dip each muffin briefly in the remaining melted butter. After that, generously dip or roll them in the cinnamon sugar mixture, ensuring you cover the tops and sides completely. Place the coated muffins on a wire rack to allow them to cool.
