Crunchy Nestum Cereal Cookies
These cookies are crispy, buttery, and have a delightful crunch from the Nestum cereal. They're perfect for snacking or sharing with friends and family.
Place a bowl on the mixing bowl lid, weigh in 50g of cereal, and set it aside.
In the Thermomix® bowl, combine the butter and icing sugar. Mix for 1 min | Speed 4. until the mixture achieves a creamy consistency.
Set the Thermomix® to 30 sec | Speed 3. Slowly add the eggs through the hole to ensure thorough mixing of the ingredients.
Incorporate the plain flour, corn starch, and salt into the mixture. Mix for 20 sec | Speed 3 until a cohesive dough forms.
Add the remaining 250g of cereal. Mix for 45 sec | ⤺ Speed 3. Transfer the mixture into a large bowl and further mix by hand if necessary until well combined.
Preheat oven to 160°C. Line a baking tray with baking paper.
Take 15g of dough, press it firmly, and gently shape it into a ball. Dip the dough ball into the bowl of prepared cereal to coat its surface. Arrange the coated dough balls on the prepared baking tray and lightly press them to slightly flatten the surface. Repeat these steps with the remaining dough.
Bake on the middle rack for 20 minutes at 160°C until golden brown. Remove from the oven and allow to cool completely. Serve once cooled or store in an airtight container.
