
Tepung Pelita
Tepung Pelita is a delightful Malaysian dessert that offers a perfect balance of flavors and textures, making it a beloved treat for all occasions. Tepung Pelita, also known as Kuih Tepung Pelita or Kuih Tepung Pelita Pandan, is a traditional Malaysian dessert that is popular during festive occasions such as Hari Raya (Eid al-Fitr) and other celebrations. The name "Tepung Pelita" translates to "lamp flour" in English, and the dessert is so named because of its resemblance to traditional oil lamps used in Malay culture.
Cut pandan leaves into small pieces and add them to the Thermomix bowl. Add 100g water to the bowl. Blend for 1 min | Speed 10 until the pandan leaves are finely chopped and the water turns green.
Strain the pandan juice through a fine sieve to extract the liquid. Rinse the mixing bowl.
Pour the pandan juice back into the Thermomix mixing bowl. Add 500g water, rice flour, sugar and salt. Add a little green food coloring to enhance the color if desired. Cook for 15 min | 100°C | Speed 1. or until the mixture thickens and becomes translucent. Pour the mixture into the prepared glass jars and let cool.
Rinse the Thermomix bowl and dry it thoroughly. Add coconut milk, rice flour, and salt to the bowl. Cook for 10 min | 98°C | Speed 3 , or until the mixture thickens.
Pour the coconut milk mixture over the set green layer in the jar.
Allow the layers to cool completely and set in the refrigerator for a few hours or overnight.
