Indigo Purple Galaxy Sri Muka, the bottom glutinous rice layer is colored with natural indigo or purple coloring, which gives it a deep purple hue reminiscent of the galaxy. This vibrant color adds an aesthetic appeal to the dessert, making it visually stunning and captivating.

Soak the glutinous rice overnight in sufficient water. Drain the rice using a simmering basket. In a bowl, combine the drained rice, coconut milk, and salt. Mix well.
Pour the rice mixture into a round dish that is approximately 2 inches high and can fit in the Varoma. Place water into the Thermomix® mixing bowl, place the Varoma on top and steam the rice for 30 min | Varoma | Speed 2. Check for doneness and steam for additional time if needed. Meanwhile soak blue peas flower in 15g of water and set aside.
Once cooked, remove the dish from the Varoma and use any flat utensil to press down and compress the rice layer. Drizzle the blue pea water over the rice to create a pattern, then drain off any excess water.
Add the egg, sugar, coconut milk, tapioca flour, all-purpose flour, and purple sweet potato powder to the Thermomix® mixing bowl. Blend the ingredients for 30 seconds | Speed 5. Pour the purple mixture on top of the rice layer and cover the dish with cling film.
Pour 1200g of water into the mixing bowl. Set the Varoma dish in place and cook for 45 min | Varoma | Speed 2. Allow the dish to cool, then slice it into serving portions and enjoy!
