Steamed Silky Tofu with Crisp Shrimps

 1 block, silky tofu
 500 g water for steaming
 20 g dried shrimps, soaked in warm water for 15-20 minutes and drained
 15 g light soy sauce
 15 g oyster sauce
 10 g sesame oil
 10 g sugar
 1 pinch white pepper powder
 60 g water
 15 g fried shallot
 10 g spring onion, chopped
 15 vegetables oil for frying

Cut the silky tofu into small pieces and arrange them on a heatproof plate that fits inside your steamer. Place the plate of tofu in the steamer, cover, and steam over medium heat for about 15 min | Varoma | Speed 2. or until the tofu is heated through.

Make the Sauce: In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, sugar, white pepper and water. Set aside.

Prepare the Dried Shrimps: In a small pan, heat the vegetable oil over medium heat. Add the soaked and drained dried shrimps and shallot and fry them until they become crispy and golden brown. This should take about 2-3 minutes. Remove from heat and set aside.

With the same pan, add the reserved sauce mixture, cook for 1 minutes.

Once the tofu is done, discard any excessive water from the plate. Sprinkle the fried dried shrimps and shallot evenly over the tofu cubes. Pour the sauce over the tofu. Sprinkle chopped green onions over the top. Serve hot.
