Macaroni is a versatile pasta that can add a fun twist to many classic recipes, including the beloved ABC soup. By adding macaroni to ABC soup, you can create a hearty and satisfying dish that will warm you up from the inside out.

WHAT IS ABC SOUP?

ABC soup is a popular Chinese soup that typically includes pork ribs, carrots, potatoes, and onions. The name “ABC” stands for the three main ingredients in the soup, which are the carrots (A), potatoes (B), and onions (C). The soup is known for its clear broth and simple, nourishing ingredients. In some variations of the recipe, other ingredients may be added, such as tomatoes, corn, or mushrooms. The soup is often simmered for several hours to allow the flavors to develop, and it is a popular dish in Chinese households, especially during the colder months. It is believed to have originated in Malaysia or Singapore and has since become a staple in Chinese cuisine.

INGREDIENTS AND SUBSTITUTES

Ingredient quantities please refer to the recipes card (Click here)!

  • Meat, cut into pieces, frozen for 1 hour – This could be any type of meat, such as beef, chicken, or pork. Freezing the meat for an hour can help make it easier to cut into small pieces.
  • Garlic – This provides flavor and aroma to the dish. It can be chopped or minced before adding it to the soup.
  • Cooking oil – This is used to sauté the garlic and meat before adding the water to the soup.
  • Water: This is the base of the soup and will be used to cook the ingredients together.
  • Onion, cut in wedges – This provides flavor to the soup and adds a slightly sweet taste to balance out the savory meat and vegetables.
  • Tomatoes, cut in wedges – Tomatoes provide acidity and sweetness to the soup, as well as a vibrant color.
  • Dried anchovies (ikan bilis), rinsed – This is a common ingredient in Asian cuisine and provides a salty flavor to the soup. If you don’t have anchovies, you can substitute with fish sauce or soy sauce.
  • Potatoes, cut in cubes (1 cm) – Potatoes are a starchy vegetable that provide a creamy texture to the soup. They also absorb the flavors of the soup well.
  • Carrots, cut in cubes (1 cm) – Carrots add sweetness and color to the soup. They are also a good source of vitamin A.
  • Macaroni – This is the pasta used in the soup. It adds texture and heartiness to the dish.
  • Chicken stock powder – This is a seasoning that enhances the flavor of the soup. If you don’t have chicken stock powder, you can use chicken bouillon or vegetable stock powder instead.
  • White pepper powder – This provides a subtle spiciness to the soup. If you don’t have white pepper powder, you can use black pepper instead.

RECIPES TIPS

  • Use high-quality meat. The meat is the main protein source in the soup, so using high-quality meat will make a big difference in the taste and texture of the dish.
  • Use fresh garlic and onions. Fresh garlic and onions provide a more intense and aromatic flavor to the soup. If you don’t have fresh garlic or onions, you can use garlic powder and onion powder as a substitute.
  • Let the soup simmer for a longer time. The longer the soup simmers, the more flavorful it will be. Consider letting it simmer for 30-45 minutes or even longer if you have the time.
  • Season to taste. The recipe calls for chicken stock powder and white pepper powder, but you can adjust the seasoning to your liking. Consider adding more salt, pepper, or other seasonings such as paprika, thyme, or bay leaves.
  • Customize with your favorite vegetables. This recipe can be adapted to include your favorite vegetables. Consider adding some celery, corn, or spinach for added nutrition and flavor.
  • Garnish with fresh herbs. Add some fresh herbs such as parsley or cilantro on top of the soup to add a pop of color and fresh flavor to the dish.

WHAT ELSE TO SERVE WITH ?

ABC soup is a wholesome and hearty soup that can be served as a meal on its own. However, if you want to serve it with other dishes, here are some ideas:

  • Stir-fried vegetables: To balance out the meal with some greens, consider serving stir-fried vegetables such as bok choy, broccoli, or green beans.
  • Salad: If you’re looking for a lighter side dish, consider serving a simple green salad with a vinaigrette dressing.
  • Fruit: Fresh fruit, such as sliced oranges or watermelon, can be a refreshing and light way to end the meal.

MADE AHEAD INSTRUCTIONS

Here are some make-ahead tips for the ABC soup recipe:

  • Prep the ingredients in advance: Cut the meat, garlic, onions, tomatoes, potatoes, and carrots ahead of time and store them in separate containers in the refrigerator. This will save time when you’re ready to cook the soup.
  • Freeze the soup: ABC soup freezes well, so you can make a big batch and freeze it in individual portions for later. To do this, let the soup cool to room temperature, then transfer it to airtight containers or freezer bags and store in the freezer for up to 3 months. Thaw in the refrigerator overnight before reheating.
  • Cook the macaroni separately: As mentioned earlier, to prevent the macaroni from becoming too mushy, you can cook it separately from the soup and add it at the end. This can be done in advance and stored in the refrigerator until ready to use.
  • Store the soup properly: If you’re storing the soup in the refrigerator, make sure to let it cool to room temperature before transferring it to an airtight container. It can be stored in the refrigerator for up to 3 days. Reheat the soup on the stove or in the microwave before serving.

STORAGE & REHEATING

Here are some storage and reheating tips for the ABC soup:

  • Storage: Let the soup cool to room temperature before storing it in an airtight container in the refrigerator. The soup can be stored in the refrigerator for up to 3 days or in the freezer for up to 3 months.
  • Reheating on the stove: To reheat the soup on the stove, transfer it to a pot and heat on medium-low heat until it reaches a simmer. Stir occasionally to prevent burning. If the soup is too thick, you can add some water or chicken broth to thin it out.
  • Reheating in the microwave: To reheat the soup in the microwave, transfer it to a microwave-safe bowl and cover with a microwave-safe lid or plastic wrap. Microwave on high for 1-2 minutes, stirring halfway through. Microwave times may vary depending on the microwave, so be sure to check the soup frequently.
  • Thawing frozen soup: If the soup was frozen, let it thaw in the refrigerator overnight before reheating. Once thawed, you can reheat it on the stove or in the microwave following the instructions above.
  • Reheat macaroni separately: If you have leftover macaroni in the soup, consider reheating it separately to prevent it from becoming too mushy. You can cook it in boiling water for 1-2 minutes or until heated through, then add it back to the soup before serving.
  • Thermomix® Warm Up Function. Heat the soup by selecting the “Warm Up” function or setting the temperature to 90°C and cooking for 5-10 minutes at ⤺ speed spoon.
