Peach Gum Dessert is a Chinese Dessert, it can be served hot or cold. Peach gum is the best ingredient to include in sweet soups and desserts. Besides the wonderful taste, it has plenty of nutrition benefits, such as amino acids and organic acid which is believed to improve the skin lucency, decrease wrinkles and lighten dark spots.

WHAT IS PEACH GUM (TAO JIAO)?

Peach gum (Tao Jiao) or Peach Resin is a solicited resin from Chinese wild peach trees. They looks like gem with their vibrant amber hues. It is a natural gum that is rich in collagen, galactose, rhamnose and amino acids. They are treasured in the Traditional Chinese Medicine community for its nutritional value similar to bird’s nest, but at a fraction of its cost. Without surprise, peach gum is very popular among women because of its high collagen content.

HOW TO CLEAN PEACH GUM?

Soak them overnight or at least 8 hours, then pick out the impurities (black dots) using tweezer or hands.

  • Sugar – You may skip this if you prefer not to sweeten the peach gum soup. Just use the natural sweetness from the red date and goji complement the soup. Or use any other sweetener on your preference.

RECIPES TIPS

  • Soak the peach gums. Soak the peach gums in water for overnight or at least 8 hours so they can grow to their maximum size.
  • Clean the peach gums. You will see some black impurities on some of the peach gums. This is normal. Let the peach gums drain in the Varoma dish and pick out the remaining black impurities.
  • Soak the snow fungus. Soak the snow fungus in a large bowl with hot water. They will plump up in about 10-15 minutes. Remove the yellow hard core at the bottom and then cut into smaller pieces

STORAGE

Let the desserts soup cools down completely. Transfer to a air-tight container and keep in the fridge for up to 7 days. Simply serve chilled or reheat if you prefer.

 65 g Peach Gum, soaked overnight and cleaned
 20 g White Fungus
 45 g Dried Longan, rinsed
 45 g Jujube Red Dates, pitted
 55 g Lump Sugar / Rock Sugar
 1500 g Water
 15 g Goji Berries, rinsed

Soak the white fungus in hot water for 10 minutes, then rinse thoroughly to remove any dirt. Use scissors to cut away the hard dark orange in the center. Let it drain dry in Varoma dish.

Place peach gum, white fungus, dried longan, red dates, lump sugar and water into mixing bowl, cook 50 min | 90°C | ⤺ Speed Spoon.

Add goji berries to mixing bowl and let stand for 10 minutes. Serve warm.
