Cassava is a starchy root, it is also named as tapioca sometime. This steam tapioca kuih / cassava cake is coated with shredded coconut. It’s a Malaysian kuih recipe. It’s so soft, moist and aromatic, this homemade kuih is quick and easy to make. Only need 5 ingredients!

CAN I USE TAPIOCA FLOUR TO MAKE THIS RECIPE?

Unfortunately, No! The main ingredient is the root. The flour or starch cannot substitute for this recipe.

You may use frozen grated cassava if you can’t find fresh cassava. If using frozen cassava, squeeze out the liquid from the defrosted grated cassava before use. You can also use frozen shredded coconut. Desiccated coconut doesn’t work well for this recipe.

CAN I USE OTHER SIZE OF STEAMING PAN?

You can use any type of steaming pan as long as it fits into the Varoma dish.

Steam Tapioca Kuih (Bingka Ubi) Cassava Cake

 500 g Tapioca, White Flesh, cut in cubes (3 - 5 cm)
 30 g Wheat Starch
 200 g Thick Coconut Milk
 100 g Water
 125 g Sugar
 250 g Fresh Grated Coconut
 1 pinch Salt
 1000 g Water for steaming

Grease a heat-resistant round steaming tray (max Ø 15 cm, height 10cm) with cooking oil and set aside.

Place tapioca cubes into Thermomix Mixing Bowl, chop Turbo | 2 sec. Chop another time Turbo | 2 sec.

Add wheat starch, coconut milk, 100 g water and sugar, blend 30 sec | speed 6. Transfer to prepared steaming tray. Place in Varoma dish.

Place 1000 g water in mixing bowl, set Varoma dish with steaming tray into position. Insert Varoma tray, add grated coconut and salt into it and gently mix with a spoon. Close Varoma lid and steam 10 min | Varoma | speed 2. Carefully open Varoma lid, remove Varoma tray with grated coconut and set aside.

Close Varoma lid, continue steam for 20 min | Varoma | speed 2. Cut tapioca kuih into slices or cubes and coat with grated coconut. Serve warm.
