True classic Italian Bolognese is meaty, spicy and cook with wine. This version is baby friendly. No chillies, no wines. Mama’s best Bolognese Pasta.

VARIATION

  • You can serve it over pasta, stuff into jacket potatoes, or make a Lasagna!
  • This recipes, I used 200g of pork and 300g of beef mince, feel free to substitute pork with beef to make it Halal, or vice verse if you can’t take beef.

RECIPES TIPS:

  • The maximum quantity of pasta that can be cooked at any one time is 500 g. When cooking 500 g pasta, increase the quantity of water to 1500 g and boiling time in step 1 to 14 minutes.
  • Long pasta such as spaghetti will initially stick out of the hole in mixing bowl lid, then drop into the mixing bowl as it softens. If necessary, cook for a further 2 minutes.
  • If water bubbles up onto the mixing bowl lid while pasta is cooking, add 1 tsp oil or butter to the cooking water to reduce frothing.

MAKE AHEAD INSTRUCTION

  • I always make this recipes once a month and freeze the remaining. To freeze it, store in an airtight, freezer-safe container, you may freeze up to three months. Heat it up using microwave or steam it for 15 minutes. (Remember cover with cling film while steaming) Once defrosted, it cannot be frozen again.
  • Or it can be made ahead and refrigerated in an airtight container for up to two days.

Pasta
 1200 g Water
 1 ½ tsp Salt (Optional)
 1 tsp Sugar (Optional)
 320 g Dried Pasta, short or long (e.g. penne, spaghetti)
Sauce
 300 g Carrots, cut into pieces
 1 Onion, halved
 15 g Garlic
 40 g Olive Oil
 200 g Pork Minced Meat
 300 g Beef Minced Meat
 1 tin diced tomatoes (400g)
 100 g Tomato Sauce
 2 tsp Salt
 1 tsp Pepper
 1 tsp Sugar
 1 tsp Dried Basil Leaves
 2 Dried Bay Leaves

Pasta

Place water into mixing bowl use Kettle Mode | 100ºC bring to the boil or using 10 min | 100°C | speed 1.

Add salt (optional) and dried pasta through hole in mixing bowl lid and cook Time indicated on package | 100°C | ⤺ speed 1, without measuring cup, until al dente. Drain pasta through Varoma dish keep in Thermoserver.

Sauce

Place carrots, onion, and garlic into the Thermomix mixing bowl, chop 6 sec | speed 5 and scrape down the sides with spatula.

Add oil and sauté 5 mins | 120°C | speed 2 .

Add mince meats , slightly mix with spatula and sauté 7 min | 120°C | ⤺ Speed Spoon.

Add tomatoes, tomato paste, salt, pepper, sugar, basil and bay leaves, mix once with spatula, place simmering basket on mixing bowl lid instead of measuring cup to prevent splattering and cook 12 min | 100°C | ⤺ Speed Spoon. Stir again with the spatula and, if necessary, break up larger pieces of minced meat with the spatula. Remove the bay leaves. Serve with penne or spaghetti.
