I love the subtle sweetness from the red dates, longan and goji berries, additional rock sugar that can be adjusted to your own preference. Rock sugar gives a subtle and delicate sweetness to the dessert that can’t be achieved with white sugar.

RECIPES TIPS

  • Add the goji berries at last. Goji berries can develop a unpleasant sour taste when left to cook for too long, so add them in towards the end will be just enough time for them to bloom.
  • Add pearl barley. If you like more texture as you chew, you might add some pearl barley as well.

 50 g white fungus
 2200 g water
 60 g rock sugar
 15 red dates, pitted
 20 g dried longan
 20 g lotus seed
 1500 g water
 15 g goji berries

Place the white fungus into the simmering basket, then put the simmering basket into Thermomix® mixing bowl, pour in 2200g of water to cover the white fungus. Soak and wash for 6 min | 50°C | Speed 4.

Take out the simmering basket using the spatula, rinse the white fungus again with running water, cut off the hard dark orange part at the bottom of the white fungus, and tear them into small pieces. Discard the water in the mixing bowl.

Insert blade cover. Put the cleaned white fungus, red dates, lotus seeds, dried longan, rock sugar and water into mixing bowl, cook 60 min | 100°C | Speed 0.5. Put the goji berries into the mixing bowl during the last 1 minute of cooking through the hole. Serve warm or chilled.
