INGREDIENTS AND SUBSTITUTES

Ingredient quantities please refer to the recipes card (Click here)!

  • Eggs – Eggs are a crucial component of this dish as they provide the base for the steamed egg custard. There isn’t a direct substitute for eggs in this recipe.
  • Water – Water is used to create the steaming environment for the eggs and minced pork. It helps cook the ingredients evenly. No substitute is needed for water.
  • Skinless Pork Belly – Skinless pork belly is a fatty cut of pork that adds richness and flavor to the dish. If you prefer a leaner option, you can substitute it with lean ground pork or chicken.
  • Garlic – Garlic adds aromatic flavor to the dish. If you don’t have fresh garlic, you can substitute it with ½ teaspoon of garlic powder or granulated garlic.
  • Ginger – Ginger adds a subtle warmth and aroma to the dish. If fresh ginger is unavailable, you can use ½ teaspoon of ground ginger as a substitute.
  • Soy Sauce – Soy sauce adds savory umami flavor to the dish. You can substitute it with tamari sauce or liquid amino acids if you prefer a gluten-free option.
  • Cooking Wine/Mirin – Cooking wine or mirin adds depth of flavor to the minced pork. If you prefer an alcohol-free substitute, you can use chicken or vegetable broth.
  • White Pepper Powder – White pepper powder adds a mild heat and subtle spiciness to the dish. You can substitute it with black pepper if white pepper is not available.
  • Five Spice Powder – Five spice powder is a traditional blend of spices, typically including star anise, cloves, cinnamon, Sichuan peppercorns, and fennel seeds. It adds a complex and aromatic flavor to the minced pork. If you don’t have five spice powder, you can omit it or use a small pinch of ground star anise or cinnamon.
  • Salt and Sugar – Salt and sugar are used to enhance the overall flavor balance of the dish. Adjust the amount according to your taste preferences.
  • Corn Starch – Corn starch acts as a thickener for the sauce. You can substitute it with potato starch or arrowroot powder if needed.
  • Spring Onion – Spring onion adds a fresh and vibrant flavor to garnish the dish. You can substitute it with chives or cilantro if desired.
  • Sesame Oil – Sesame oil adds a rich nutty flavor to the dish. There isn’t a direct substitute for sesame oil, but you can omit it if necessary or use a small amount of another flavorful oil, such as peanut oil.

RECIPES TIPS

  • Freezing the pork belly for one hour is to firm up the meat, making it easier to handle and achieve a finer texture when minced, which allows for cleaner and smoother cuts when you’re chopping it into small pieces. This results in a better texture and consistency for the final dish. If you prefer not to freeze the pork belly, an alternative method is blend it into mincemeat while it’s at room temperature. However, it’s worth noting that the texture may not be as fine as when using the frozen method.
  • Strain the egg mixture to achieve a silky smooth texture, strain the beaten egg mixture through a fine-mesh sieve before steaming. This helps remove any lumps or air bubbles.
  • Increase or decrease water for desired consistency: The amount of water used in the recipe can be adjusted to achieve the desired texture of the steamed egg. If you prefer a softer and more custard-like texture, you can increase the water slightly. Conversely, if you prefer a firmer and denser texture, you can decrease the water slightly.
  • Adjust the cooking time: Steaming time may vary depending on the thickness of the steamed egg. Keep an eye on the texture and adjust the cooking time accordingly to achieve your desired consistency—soft and custard-like or firmer and slightly set.
  • Season the minced pork: If you have more time marinate the minced pork with soy sauce, cooking wine/mirin, salt, sugar, and spices (white pepper powder, five spice powder) for at least 15-30 minutes before steaming. This enhances the flavor of the meat.
  • Add corn starch for a velvety sauce: Mix corn starch with water to create a slurry and add it to the marinated minced pork. This will thicken the sauce as it steams, creating a velvety texture.
  • Garnish with spring onions and sesame oil: Sprinkle chopped spring onions over the steamed dish for a fresh and aromatic touch. Drizzle a small amount of sesame oil for added richness and nuttiness.
  • Let it rest before serving: After steaming, allow the dish to rest for a few minutes to let the flavors meld together. This also helps the custard set slightly and makes it easier to handle when serving.
  • Serve with steamed rice or noodles: Steamed Egg with Minced Pork pairs well with steamed rice or noodles, providing a satisfying and complete meal. Consider serving it alongside some steamed greens or stir-fried vegetables for added freshness.
